Easy muffin recipes that work, every single batch.

Home bakers and moms develop every recipe here, then a group of testers bakes it in their own kitchens before it goes live. When a batch comes out dense, flat or dry, the recipe goes back to the drawing board.

Easy muffin recipes from a team of home bakers

We are home cooks and moms, not a lab. One of us bakes the first batch, then our private group of Muffin Recipe Testers makes it with their own flours, pans and ovens and tells us exactly what happened. Their notes, from swapping in whole wheat flour to skipping the paper liners, go straight into the post with their first name and last initial.

The reason these muffin recipes hold up is the method behind them. Our recipe foundation starts the oven at 400°F to lift the tops, then drops it to 350°F to finish the bake. We rest the batter, portion it with a cookie scoop so every muffin is the same size, and call them done when the center reads 200 to 205°F instead of guessing.

Our opinion: the biggest mistake in most muffin recipes is stirring too long. A few lumps are normal, and a silky batter almost always means a tough, flat muffin. Mix until the dry flour disappears, then stop.

Muffin baking questions, answered

  • What is the secret to moist muffins? Melted butter or oil, plenty of ripe fruit or pumpkin, and a batter you stop mixing early. Pull them at 200 to 205°F inside.
  • What should you never do to muffin batter? Never beat it smooth. Overmixing builds gluten and gives you dense, rubbery muffins.
  • How do you get tall, domed tops? Fill the liners to the top, bake hot for the first 5 minutes, then lower the heat to finish.
  • Which muffin flavors are the most popular? Blueberry, banana and pumpkin lead what people search for, followed by chocolate chip.
  • Can I make these muffins gluten free? Yes. Choose one of our gluten free recipes, or swap a 1:1 gluten free flour blend for the all purpose flour in a healthy recipe.
  • Do your recipes use refined sugar? Our healthy versions use honey, maple syrup or fruit. Our classic versions use real sugar or brown sugar.
